Mini Potato Skins

This is a fairly easy and super tasty gluten free appetizer. Sometimes my hubby and I have Friday night appetizer night and you really can't go wrong with potato skins : )

Ingredients:
  • 6-8 mini red potatoes
  • cheddar cheese, shredded
  • 2 slices thick cut applewood smoked bacon, cooked & crumbled
  • 2 green onions, diced
  • salt to taste
  • sour cream, any other potato skin topping you like (ranch dressing if you're Jason)
1. Bake potatoes in oven at 375* for 30 minutes

2. Cut potatoes in half, core out part of each half

3. Add cheese and bacon to cored out potatoes, bake at 375* until cheese is melted, top with green onions

4. Enjoy!

Veggie Stir Fry

It's summer folks, and I am pretty excited about that!

Here is a simple gluten free grilling recipe to celebrate!

Veggie Stir Fry

Ingredients:
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 yellow pepper, sliced
  • 1 sweet onion, sliced
  • 6 red potatoes, sliced
  • drizzle of olive oil
  • drizzle of balsamic vinegar
Put all ingredients in a grill friendly pan, place on grill, drizzle olive oil and balsamic vinegar and grill until reaching desired crispness.

Product Review: Authentic Foods Chocolate Chip Muffins


I have bought and tried Authentic Foods Chocolate Chip Muffins a few times now from my favorite gluten free grocery store. Tailor Made Nutrition in Woodbury, MN is a 100% gluten free store, makes shopping very easy and stress free! When I discovered the store last year this was one of the first products I tried. They make a great breakfast on the go...just pop them in the microwave for 15 seconds and you're good to go!

The second time I made them, I added some unflavored protein powder into the dry mixture as I was preparing them to make them a bit more filling and they still turned out great!


Avocado Salsa

Mix together the following ingredients to get the delicious salsa you see above : )

  • 1 can mild rotelle with green chiles
  • 1 ripe avocado, peeled & sliced
  • 1/4 yellow onion, finely chopped
  • 1 lime, freshly squeezed
  • Cilantro, chopped...to taste
  • Salt to taste
  • Optional suggestion by Jason which I am sure is good...add corn : )

Dorito Lasagna

Doritos are a nice comfort/junk food that I can still enjoy as a gluten freebie. My little brother inspired this recipe last summer. He told me about it and we've been hooked ever since. It's a nice way to enjoy taco meat in a different way.

Dorito Lasagna

 Ingredients:
  • 1/2 bag Nacho Cheese Doritos
  • 1 can GF refried beans, cooked
  •  Ground Beef, cooked
  • Shredded cheese
1. Layer Doritos on bottom of glass cookware
2. Top Doritos with 1/3 of beans, meat, and then cheese
3. Repeat until layered to the top
4. Bake at 425* for 20 minutes or until cheese is melted throughout
5. Enjoy!

Protien Balls

This is one of my favorite snacks and my husband's too : ) They are filling and super tasty!!

Protein Balls
 
Ingredients:
  • 4 cups of gluten free oats
  • 1 cup of your favorite GF chocolate chips
  • 3 tbsp flax seeds
  • 1 scoop of protein powder (I used designer whey unflavored powder...but chocolate flavored powder tastes delicious as well)
  • 1 cup of your favorite GF peanut butter, crunchy or creamy
  • 1/4-1/2 cup of agave nectar or honey
 Put all ingredients in a big bowl and mix them all together! I just use my hands, I've found it to be both easier and way more fun. You may need to add more peanut butter or agave, there is no exact science : )
Roll into balls and place in large tupperware. Separate layers with wax paper and refrigerate. Enjoy!

Baja Citrus Chicken and Lime Slaw

This is one of my favorite recipes. I have even shared it on my other blog : ) All ingredients in this recipe are confirmed gluten free, even the marinade for the chicken!

Baja Citrus Chicken and Lime Slaw
Ingredients:

Slaw

  • 2 cups broccoli slaw mix
  • 4 tsp minced cilantro
  • 4 tsp minced sweet onions
  • 4 tsp minced sweet red peppers
  • 4 tsp lime juice
  • 2 tsp sugar
Sauce
  • 1/2 cup low fat sour cream
  • 2 tsp of lime juice
  • 2 tsp chopped cilantro
Chicken
  • 6 chicken breasts, halved, marinaded in the packet below, grilled
  • McCormick Baja Citrus Chicken marinade (see package for additional ingredients for marinade)
You can serve this as a salad and mix the chicken with the broccoli slaw and dip it in the sour cream, or forgo the sour cream all together. The lime juice in the slaw makes an awesome dressing in and of itself : )

For those of you with family members who aren't living gluten free, serve the chicken on a Hawaiian roll and spread the sour cream sauce on the bun and top the chicken with the slaw. It's husband approved.

The recipe was originally inspired by a Taste of Home article I read, but I changed up several ingredients.

Tater Tot Nachos

Why not start off the gluten free recipes with some comfort food?!

The hubby and I were rained in the other day and we were craving some fast food our appetizer type food. I had planned to make these and the ingredients were ready to go in the freezer/fridge.

Ore-Ida labels their potatoes as gluten free or not which is always helpful and everything else we used besides the cheese was naturally gluten free : )

Tater Tot Nachos

Ingredients:
  • 1/2 bag tater tots (we used Ore-Ida)
  • 1 cup shredded cheese
  • 4 slices bacon, cooked and chopped
  • 4 green onions, chopped
(cheese sauce or sour cream for dipping)

1. Bake tots, pan fry bacon
2. Spread cheese over fully baked tots, top with chopped bacon and green onion
3. Broil until cheese is melted
4. Enjoy!



For seasoned sour cream, simply mix Lawry's Seasoned Salt (1 tsp) with1/2 cup sour cream. Lawry's is gluten free too : )

New Blog : )

I have decided to take the leap of starting a new blog that's all about gluten free life. It will help hold me accountable, share my thoughts on products I've tried, and separate my photo/lifestyle blog from the gluten free stuff : )

I think it's great for people attempting to live this lifestyle to have resources online. I know I have been helped big time by many of the blogs already out there. This will just offer my unique perspective on the subject...especially as more of a newbie.

So if you know someone who is living gluten free or is interested in it, send them my way. I really appreciate it!
